Small, medium, large, jumbo: how many of your eggs make the recipe’s.
How the Egg Size Substitution works
US recipes assume large eggs. Enter how many eggs the recipe calls for and their size, and the size you have, to see how many of yours weigh the same.
USDA weights without the shell: small 38 g, medium 44 g, large 50 g, extra large 56 g, jumbo 63 g. Eggs needed = eggs in the recipe × weight of that size ÷ weight of your size, rounded to the nearest half egg.
Example: 3 large eggs weigh 150 g; with medium eggs that is 150 ÷ 44 = 3.4, so use 3 1/2 medium eggs (beat the last one and use half).
US egg sizes by weight
Weight without the shell from USDA FoodData Central, the volume of that egg beaten (USDA: 1 cup of beaten egg = 243 g), and how many large eggs it equals.
US egg sizes by weight| Size | Weight (no shell) | Beaten | Large eggs |
|---|
| Small | 38 g | 2 tbsp + 1 1/2 tsp | 0.76 |
|---|
| Medium | 44 g | ≈ 2 tbsp + 2 1/2 tsp | 0.88 |
|---|
| Large | 50 g | ≈ 3 tbsp + 1 tsp | 1 |
|---|
| Extra large | 56 g | ≈ 3 tbsp + 2 tsp | 1.12 |
|---|
| Jumbo | 63 g | 1/4 cup + 1/2 tsp | 1.26 |
|---|

Frequently asked questions
How many medium eggs equal 2 large eggs?
2 large eggs weigh 100 g and a medium egg 44 g, so you need 2.3 medium eggs: use 2 and add about 12 g of beaten egg.
How much does a large egg weigh?
About 50 g without the shell (USDA): 17 g of yolk and 33 g of white. A cup of beaten egg is about 4.9 large eggs (243 g).
Can I use jumbo eggs instead of large?
Yes, by weight: a jumbo egg is 63 g against 50 g, so 4 large eggs (200 g) are about 3 jumbo eggs (189 g).
